Nancy Green, a former slave, debuted the first \u201cAunt Jemima\u201d in 1893 at the Chicago World\u2019s Fair. Cook Green was employed on the city\u2019s South Side. She was paid to serve pancakes to fairgoers while donning an apron and a headscarf.
\nHer portrayal of \u201cAunt Jemima\u201d lasted until her passing in 1923. Evans claimed that Anna Short Harrington, his grandmother, took over after that.

\nMembers of the fraternities at Syracuse University, where Harrington worked as a chef, praised her pancakes. During the 1935 New York State Fair, she distributed homemade pancakes when a Quaker Foods employee came across her.<\/p>\n

He asked, \u201cHow many white people were raised watching cartoons like Aunt Jemima at breakfast daily? How many white businesses generated huge profits while giving us nothing? I believe they ought to examine it. They cannot simply eradicate it while we continue to suffer.\u201d
\nThey\u2019re just going to erase history as if it never happened after making all that money\u2014and now that backers are demanding restitution for slavery?\u201d Evans continued. \u201cThey won\u2019t offer us anything, right? What grants them this authority?\u201d
